Run the following Vcpkg command to install the port.

vcpkg install libuv

libuv provides CMake targets:

find_package(libuv CONFIG REQUIRED)
target_link_libraries(main PRIVATE $<IF:$<TARGET_EXISTS:libuv::uv_a>,libuv::uv_a,libuv::uv>)
